Potato accordion with garlic


Baked potatoes in their skins – it’s always delicious. But even it can be improved. This will require a bit of work with a knife: to make accurate cuts accordion and to fill them with garlic and rosemary. With the scent of baked potatoes can be compared only to the smell of rosemary and garlic in the roasting turns into a real delicacy. Potato accordion even has its own name – Hasselbek potatoes.


Ingredients:


  • 5 smooth medium-sized potatoes,

  • 4-5 tbsp olive oil,

  • 1 tbsp butter

  • 8 cloves garlic,

  • 5-6 sprigs of rosemary,

  • salt and pepper to taste

Instructions:


  1. Preheat oven to 220 ° C. Potatoes thoroughly clean the brush, but do not clean peel. Cut the potatoes into thin slices, without reaching the end of about 1 cm. Very finely chop the garlic and place it into the slits in one. In the remaining sections enclose 1-2 leaf rosemary.

  2. Pour the bottom of the mold olive oil, put the potatoes, brush it on all sides with olive oil using a brush. Generously sprinkle with salt and pepper. Bake 35 minutes.

  3. When the cuts unfold again lubricate the potatoes with butter and bake for another 25-35 minutes until soft and until golden brown. If the edges begin to burn, but the middle still remains solid, cover the potatoes with foil and gently lower the temperature.

Serve the potato accordion hot, sprinkled with fresh herbs.
