Mushroom soup

Ingredients:
15 large shiitake mushrooms (oyster mushrooms or 20-25)
1 tbsp olive oil
1 tbsp butter
1 onion (chopped)
1 carrot (chopped)
1 tsp thyme
1 tsp salt
Pepper – to taste
2.5 cups water
1.5 cups cream
Green onions Serving (chopped)
Recipe for mushroom soup puree:
First, slice the mushrooms over medium pieces. Then, heat 1 tablespoon olive oil and 1 tablespoon butter in a large saucepan, add the sliced mushrooms and fry for about 10 minutes, until the mushrooms are tender. Remove half of the cooked mushrooms into a separate bowl.
The other half of the mushrooms, the rest in a large saucepan, add the chopped onion, carrot, thyme, 1 teaspoon salt and pepper to taste. Cook the vegetables for 10 minutes, until the onions and carrots soften slightly. Add 2.5 cups of water to the vegetables and mushrooms in a saucepan, bring to a boil and cook over medium heat for 20 minutes. You can add a little more water. Remove from heat, cool slightly and chop the soup in a food processor or using a blender, until it reaches the consistency of mashed potatoes.
Put the puree back into the same pan, add the sauteed mushrooms and 1.5 cups of cream. Bring to a boil, reduce heat and simmer, covered for 5 minutes, stirring constantly. Add more salt and pepper if desired. Put the well chopped green onion and stir.
